This post is sponsored by Love One Today. All opinions are my own and I only share products I personally love. Thanks for supporting the brands that make this site possible! I have a slight suspicion that this baked avocado and egg recipe (aka egg stuffed avocado) is about to become your new favorite breakfast. And let me tell you why. Baked avocado egg boats are essentially egg cooked in avocado which means they are SUPER nutritious. In addition to being super flavorful and delicious, they have protein, healthy fats, and are a good source of fiber, thanks to the egg… and of course, the star of the show… FRESH AVOCADOS! I’m thrilled to once again partner with Love One Today to bring you this delicious avocado with egg baked inside! I eat avocados almost every day, and am excited to inspire you to do the same. Avocados can help curb bad eating habits, especially since they contain naturally good fats and are a good source of fiber. You may have grown up eating toad in a hole. And essentially, we’re making avocado egg in a hole. But instead of the bread, we’re using avocados. (For an avocado-free version, try oven baked eggs or cloud eggs instead!)

How To Make Baked Avocado Eggs

These baked egg avocado boats are a simple meal that’s packed with nutrition and easy to prepare — much like BLT stuffed avocados let me show you how to bake an egg in avocado:

Wash and cut the avocados. Slice avocados in half, remove the pit, and scoop out some of the avocado flesh so you can fit an egg into the well. (Snack on any extra avocado!)

Carefully crack the eggs into the avocado wells. You want to be careful to not break the yolk. Season avocados and egg. Sprinkle the egg stuffed avocado with salt and pepper. Bake the avocados. First you’ll bake for 7 minutes, then top the egg cooked in avocado with a sprinkle of cheese. (This is a baked avocado with cheese, after all.) Bake again according to how well done you want your eggs. See timing range below.

Sprinkle with chives and red bell pepper. These garnishes add a touch of flavor, color, and crunch!

Tips for Making Baked Avocado Egg Boats

While this baked avocado and egg recipe is simple, I do have a few tips:

Lean the avocados against each other or the edges of the baking dish so that they are upright and the yolk doesn’t leak out. You may want to use a smaller baking dish if you aren’t making the full recipe. Don’t worry if some of the white spills over. If you really want to avoid it, you can place the avocado half in a small bowl, crack the egg into it, and then move the avocado to the baking dish, leaving behind any excess egg white in the bowl.

Are Eggs And Avocado Good For You?

Yes! Eggs and avocados are incredibly nutrient-dense foods. Include fresh avocados in everyday healthy eating plans to help increase fruit and vegetable intake and as a delicious, heart-healthy, whole food source of naturally good fats. A variety of fruits and veggies is recommended to help control weight and blood pressure, and avocados fit right in. Pair the eggs and avocados together, and you’ve got a breakfast (or snack!) that’s packed with protein, healthy fats, and plenty of fiber. You may want to start eating a baked stuffed avocado every day…

Can You Make Egg Stuffed Avocado Ahead Of Time?

This recipe is best made fresh because you don’t want to re-cook the eggs or avocado. If you want to prep things in advance, I’d recommend prepping the garnishes. This baked avocado and egg recipe takes just 10 minutes to prep, so it’s fast, even if you don’t make it ahead of time.

Ceramic Baking Dish – This gorgeous baker will show off your baked avocado egg boats. It’s temperature resistant, too.
