Making toffee starts slow and then goes very quickly at the end.Use a candy thermometer: Use a candy thermometer, otherwise you risk over-cooking or under-cooking the toffee.Heavy bottom pan: Use a heavy-bottomed saucepan to make this churro toffee. You want to do this because thinner saucepans won’t heat the candy evenly and the mixture can burn very easily.If the butter separates: Sometimes the butter can separate from the sugar when making toffee.
