What Is Green Bean Almondine?
The American term “almondine” is actually known as “amandine” in French, which simply means a dish topped with buttered, toasted almonds. This type of topping is common for fish, sometimes asparagus or potatoes, and most notably, green beans. Call it green beans amadine or green beans almondine… all I know is that it’s French and absolutely delicious – especially with filet mignon!
The Ingredients

Olive Oil – Use an extra virgin olive oil for the best flavor, but regular olive oil or avocado oil will also work.Green Beans – I usually trim the ends, but it’s up to you if you want to spend the time; sometimes bagged green beans are already pre-trimmed, too. You can also substitute haricots verts if you like.Sea Salt & Black PepperButter – I prefer to use grass-fed butter for best flavor and nutrition, but you can use any unsalted butter.Garlic – Fresh garlic has the best flavor, but I often use jarred for convenience.Almonds – Use sliced or slivered almonds.Lemon juice – I recommend fresh lemon juice, plus more lemon wedges for serving.
